Left over Pulp from Nut Milk, No problem
A lot of waste can happen from making nut milk, the pulp remains leave some of us in wonder. What are some simple ways to not waste this product and make something out of wet almond meal thats yummy and nutrtional. Easy. One of them is energy balls. I don't know about you but I love things like this. Being a teacher and chef as well as owning my own company and writing for others, sometimes I need a pick me up and one that I can have on the go. Now I tend to have an issue if I have to much sugar, even such as honey or maple, so I'm going to give a few options here as well as two different flavors and some fun things to add it!
Recipe from 1 cup almonds for milk:
COCONUT NIB
pulp from 1 cup almonds
2 tbl maple syrup ( if ok with this sweeter add 2 more)
zest from 1 lemon or orange
2 tsp chia seeds
2 tsp flax seeds
1 tbl cocoa nibs
2 tsp cinnamon
1 tbl cocoa powder
pinch of sea salt
coconut flakes for rolling
1 -2 tbl nut butter of your choice ( I usually soak extra almonds and make my own nut butter with roasted almond and sunflower seeds)
- put everything into a kitchen aide mixer and start to blend until it starts to stick like dough
- roll into tbl sizes balls then roll in coconut flakes that are unsweetened. Store in freezer and eat when you need a little up kick!
* add ons - different sweeter such as honey, protein powders such as tropekea or any of your choice (if adding protein powder, add more nut butter or sweeter so it doesn't become to dry)
GOJI NUT
pulp from 1 cup almonds
2 tbl maple (or add more if you would like)
2 tsp chia seeds
2 tsp flax
1 tbl cocoa nibs
2 tbl goji berries
1 tsp nutmeg
1 tsp cinnamon
zest of 1 orange
pinch of sea salt
1-2 tbl nut butter of your choice
coconut flakes for rolling
- same process as before except you may want to blend in food processor so goji berries get broken down <3 freezer and enjoy!!
